Fresh Brunch from the Union Square Market

I woke up Saturday morning in the mood to walk around, so I went to the Union Square farmers market to get some fresh veggies to make a deliciously simple brunch.

The meal consisted of roasted French fingerling potatoes with carmelized shallots, three different colors of squash sauteed, microgreen salad with fresh squeeze lemon and pepper dressing, and scrambled eggs.  To top it off, I shaved manchego cheese over the entire plate.

Real simple.  Real fresh.  Real tasty.  And the best part is that it cost me less than $8 for two full plates of food.
